
Ingredients:
- 1 block firm tofu
- 1 cup black fungus
- 1 cup vermicelli
- 5 eggs
- 1 cup onions, chopped
- 2 teaspoons vegetarian chicken seasoning
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- Yellow food coloring
Directions:
- Soak the black fungus in a bowl of water for a few hours
- Soak the vermicelli in another bowl of water for a few hours
- Drain and chop the black fungus and vermicelli
- Pat a block of firm tofu dry
- Chop it into small cubes
- Crack 4 eggs into a small bowl
- Whisk the eggs
- Set the egg mixture aside
- Put the tofu into a large mixing bowl
- Add the black fungus and vermicelli
- Add the onions
- Add the vegetarian chicken seasoning, pepper, and garlic powder
- Mix well
- Add the egg
- Mix well
- Spray an oven-safe casserole dish with some cooking spray
- Pour the tofu mixture into the dish
- Bake at 385 degrees for 30 minutes
- Crack 1 egg and whisk in a small bowl
- Add a couple of drops of yellow food coloring
- Mix well
- Turn off the oven and remove the casserole dish
- Pour the yellow egg mixture onto the meatloaf, spreading it evenly all over the top
- Put the casserole dish back int he oven
- Leave the meatloaf in the oven for 10 minutes
- Serve hot with rice
