Episode 162: Seared Pho Noodles

Ingredients:

  • 1 package phở áp chảo noodles
  • 1 tablespoon mushroom sauce
  • 2 cups vegetables of your choice, chopped
  • 1 cup vegetable broth
  • 2 teaspoons dark soy sauce
  • 1 clove garlic, minced
  • 1 tablespoon tapioca starch
  • 3 tablespoons water

Directions:

  • Break apart the noodles into individuals strands
  • Mix in mushroom sauce and set aside
  • Stir fry the vegetables and set aside
  • Add the vegetable broth to a small pot over medium heat
  • Add the garlic and soy sauce
  • Mix well and simmer for 5 minutes
  • Make a tapioca starch slurry by combining the starch and water together
  • Stir in the slurry and mix well
  • Take the sauce off the heat
  • Stir-fry the noodles over medium-high heat until seared
  • Plate the noodles and top with as much vegetables as desired
  • Ladle a generous amount of sauce over the noodles and the vegetables
  • Serve hot
