Episode 154: Crispy Vietnamese Crepes take 2

Ingredients:

  • 1 package banh xeo mix
  • 1/4 cup coconut milk
  • 1 onion, sliced
  • 1 king oyster mushroom, sliced
  • 1/2 cup mung beans, cooked
  • 1 cup bean sprouts

Special equipment

  • Air fryer

Directions:

  • Mix the banh xeo mix as directed
  • Add the coconut milk
  • Put a non-stick pan over medium-high heat
  • Add a little olive oil
  • Add some sliced onions
  • Add some sliced mushrooms
  • Ladle in the banh xeo mix until you just cover the pan
  • Swirl the pan so the mixture spreads out as thinly as possible
  • Add some cooked mung beans
  • Cover for 2 minutes
  • Add some bean sprouts
  • Lower the heat and cover for a few more minutes
  • Flip the crepe in half
  • Put the crepe in the air fryer
  • Air fry at 300 degrees for 5 minutes
  • Serve hot with your favorite vegetables and vegetarian fish sauce
