
Ingredients:
- 1 block SOFT tofu (NOTE: silken tofu will not work as well)
- 2 cups of chopped vegetables of your choice
- 1-2 tablespoons stir-fry sauce of your choice
- 1 tablespoon water
- Cornstarch for dredging
Directions:
- Cut tofu into small rectangular pieces
- Put pot over medium heat
- Add enough olive oil to evenly coat the bottom thinly
- Dredge the tofu pieces in cornstarch
- Optional: make sprinkle a little salt on tofu pieces
- Immediately add tofu pieces to pot
- Fry until both sides are golden brown
- Set aside
- Put a pan over medium heat with some olive oil
- Add the vegetables and cook until they start to become tender
- Add stir-fry sauce and water
- Cook until vegetable evenly coated with sauce
- Serve vegetables and tofu hot over a bed of rice
