
Recipe adapted from “The Lotus and Artichoke” Indian cookbook
Ingredients:
- 2 dates, de-seeded and chopped
- 8 cubes of ice
- 1 cup soy yogurt
- 2/3 cup berries of your choice (may substitute mangos)
- 10 mint leaves
- 2 cups water
Special Equipment:
- Blender
Directions:
- Toss all ingredients into blender
- Blend until smooth
- Serve with a couple of mint leaves sprinkled on top
