
Ingredients:
- 1 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 tablespoon maple syrup
- 1 tablespoon soy milk
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup flour
- 1 cup oats of your choice
- 1 cup apples, chopped
Directions:
- Add coconut oil, vanilla extract, maple syrup, soy milk to a bowl
- Mix well
- Add brown sugar, baking soda, cinnamon, and salt
- Mix well
- Add flour, oats, and apples
- Mix well
- Use an ice cream scoop and scoop out dough onto a baking sheet overlaid with parchment paper
- Slightly flatten the cookies
- Bake 350 degrees for 10-12 minutes
- Allow cookies to cool for 15 minutes before serving
