
Special equipment:
- Steamer
- Lots of tiny dishes about 2.5 inches in diameter
- Tray filled with thin layer of water and ice
- Grater
Ingredients:
- 1 package bot bánh bèo mix
- 4 cups water
- 5 green onions, chopped
- 1/2 cup mung beans, soaked in water for an hour and drained
- 1 shallot, roughly chopped and deep fried
Directions:
- Cook mung bean
- Mash mung bean
- Roll mung bean into a ball
- Shave mung bean with a grater
- Sauté green onions in a lot of olive oil and set aside
- Put the tiny dishes in a steamer
- Mix the bot banh beo mix with water in a large bowl
- Fill the dishes 3/4 full with batter
- Steam for 7 minutes
- Carefully transfer dishes to ice water bath (do not get the cakes wet)
- Remove the cakes and arrange on a plate
- Sprinkle with sauteed onions, mung bean, and fried shallots
- Serve hot with soy sauce or vegetarian fish sauce
