
Special equipment:
- Stand mixer
- Pasta rack
Ingredients:
- 400 grams flour
- 1/2 teaspoon salt
- 208 grams water
Directions:
- Add flour to a mixing bowl
- Add salt
- Set the mixer on level 2 speed
- Slowly add water to the mixing bowl
- If the dough seems a bit too dry, wet your hands and gently knead the dough
- Switch to the hook attachment and knead at a higher speed for 10 minutes
- Wrap the dough in plastic wrap
- Allow the dough to rest for an hour or so
- Cut the dough into fourths
- Run the dough through the pasta attachment a couple of times at setting level 4
- Hang the dough sheets on a pasta rack
- Cut the dough sheets into large sized noodles
- Put the noodles in a bowl of flour, so they don’t stick to each other
- Boil the noodles in water until they are slightly firm
- Serve with your favorite broth and veggies
