
Special equipment:
- Small blending device
Ingredients:
- 1/2 block silken tofu
- 1/3 cup canola oil
- Juice of half a squeezed lemon
- ½ teaspoon kosher salt
- 1 teaspoon apple cider vinegar
- ½ teaspoon Dijon mustard
Directions:
- Put tofu in blending device
- Add canola oil, lemon juice, kosher salt, apple cider vinegar, Dijon mustard
- Blend for 20-30 seconds
Vegan potato salad recipe:
- Add 2 steamed and chopped potatoes to a bowl
- Add ¼ cup of chopped onion
- Add 1 celery stalk, chopped
- Add ¼ cup of vegan mayo
- Add ½ teaspoon celery salt
- Add 1 teaspoon of mustard
- Mix well
- Season with salt and pepper to taste
