
Ingredients:
- ¼ cup of fermented black beans
- 3 cloves of garlic
- 3 tablespoons ginger, minced
- 3 tablespoons green onions, chopped
- ½ cup of vegetable broth
- 1 teaspoon of red wine vinegar
- 2 teaspoons cane sugar
- 1 tablespoon tapioca starch
- 2 tablespoons water
- 1 cup tofu, chopped
- 1 cup vegetables of your choice, chopped
Directions:
- Soak fermented black beans for 1 hour
- Drain the beans and smash them up into a paste
- Sauté the garlic with a little bit of olive oil
- Add the ginger
- Add the green onions
- Add the black bean paste
- Add the vegetable broth
- Add the red wine vinegar
- Add the cane sugar
- Stir well and simmer for a few minutes
- Add a mixture of 1 tablespoon tapioca starch and 2 tablespoons water
- If the sauce is too salty for your taste, add a little more sugar
- Pour over tofu and vegetables and serve with rice or pasta
