
Ingredients:
- 1 carrot, diced
- 2 celery sticks, diced
- 1 onion, diced
- 1 cup mushrooms, diced
- 4 cloves of garlic, minced
- 1 pound of vegetable protein (e.g. ground Beyond Burger)
- ½ teaspoon paprika
- ½ teaspoon oregano
- ½ teaspoon rosemary
- ½ teaspoon thyme
- 1 & ½ cups red wine
- 1 tablespoon balsamic vinegar
- 1 tablespoon miso soy paste
- 1 tablespoon agar powder
- 1 tablespoon soy sauce
- 14 ounces of crushed tomatoes
- 1 cup water
- 4 bay leaves
- ¼ cup soy milk
- 2 tablespoons of nutritional yeast flakes
Special equipment:
- Dutch oven
Directions:
- Stir-fry the carrots, celery, onion, and garlic with some olive oil until carrots are softened
- Add the mushrooms
- Add vegetable protein
- Like ground Beyond Burger…
- Mash everything up and cook for a few minutes
- Add paprika, oregano, rosemary, and thyme
- Add 1 & ½ cups red wine
- Reduce heat and simmer for 5 minutes
- Add balsamic vinegar
- Add miso soy paste
- Add agar powder
- Add soy sauce
- Mix well
- Add crushed tomatoes
- Mix well
- Transfer to a Dutch oven
- Add water
- Add bay leaves
- Bake uncovered in an oven at 300 degrees for 1 hour
- Add soy milk
- Add nutritional yeast flakes
- Mix well
- Bake for another 20 minutes
- Serve with spaghetti noodles
