
Ingredients:
- 1 package banh xeo mix
- 1/4 cup coconut milk
- 1 onion, sliced
- 1 king oyster mushroom, sliced
- 1/2 cup mung beans, cooked
- 1 cup bean sprouts
Special equipment
- Air fryer
Directions:
- Mix the banh xeo mix as directed
- Add the coconut milk
- Put a non-stick pan over medium-high heat
- Add a little olive oil
- Add some sliced onions
- Add some sliced mushrooms
- Ladle in the banh xeo mix until you just cover the pan
- Swirl the pan so the mixture spreads out as thinly as possible
- Add some cooked mung beans
- Cover for 2 minutes
- Add some bean sprouts
- Lower the heat and cover for a few more minutes
- Flip the crepe in half
- Put the crepe in the air fryer
- Air fry at 300 degrees for 5 minutes
- Serve hot with your favorite vegetables and vegetarian fish sauce
