
Ingredients:
- 3 cups zucchini, grated
- 1 & ½ cups panko bread crumbs
- 2 eggs, beaten
- ½ teaspoon Old Bay seasoning
- ½ teaspoon Italian seasoning
- 2 tablespoons mayonnaise, (vegan or regular)
Directions:
- Put zucchini in a large bowl
- Add panko bread crumbs, eggs, Old Bay seasoning, Italian seasoning, and mayonnaise
- Mix well
- Pack the zucchini mixture tightly into a 1/3 cup measuring cup
- Flip it onto some parchment paper
- Repeat until you use up the mixture
- Deep fry the zucchini crab cakes until golden brown on both sides
