
Ingredients:
- 1 block of firm tofu
- Black pepper
- Kosher salt
- Garlic powder
- Potato starch
- 6 cloves garlic, minced
- 1 & 1/2 cups cherry tomatoes
- 1 cup zucchini, chopped
- 1/3 cup white wine
- 1 cup vegetable broth
- Juice from 1/4 lemon
Directions:
- Pat the tofu dry
- Put the tofu between two cutting boards in the sink
- Add some weights on top to press the tofu
- Press for 1 hour
- Shred the tofu into bite-sized pieces
- Sprinkle black pepper, kosher salt, and garlic powder over tofu
- Dredge tofu in potato starch
- Air-fry tofu at 350 degrees for 10 minutes
- Saute the garlic in a skillet with some olive oil
- Add the cherry tomatoes
- Add the zucchini
- When vegetables are tender, add the white wine
- Add the vegetable broth
- Add the lemon juice
- Simmer for 10 minutes
- Turn off the stove and toss in the tofu
- Serve over your favorite pasta
