
Ingredients:
- 2 cups soy milk
- 1/4 cup water
- 1 tablespoon agar powder
- Ginger, 2-inch stick peeled
- 1/2 cup water 1/2 cup rock sugar
Directions:
- Slowly warm soy milk in a pot over a stove to medium heat
- Stir the soy milk constantly to prevent scorching
- Bring 1/4 cup water to another pot and bring to a boil
- Add the agar powder to the water pot and reduce heat to a simmer
- Stir quickly
- Add soy milk to agar-water pot
- Bring to a boil, stirring constantly
- Turn off heat once soy milk begins to boil
- Stir for one more minute
- Cover a bowl with cheese cloth
- Strain the milk
- Transfer strained milk to another bowl
- Refrigerate for 2 hours
- Gut ginger into small slices and mash them up
- Boil 1/2 cup water in small pot
- Add the rock sugar
- Add the ginger
- Stir continually until sauce begins to thicken
- Turn off heat and remove ginger
- Cut the tofu into thin slices and put into a small bowl
- Add enough ginger-sugar sauce to cover
- May serve hot or cold
