Episode 99: Vegetarian Vietnamese Meatloaf

Also known as trứng hấp chai

Ingredients:

  • 1 block firm tofu
  • 1 cup black fungus
  • 1 cup vermicelli
  • 5 eggs
  • 1 cup onions, chopped
  • 2 teaspoons vegetarian chicken seasoning
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • Yellow food coloring

Directions:

  • Soak the black fungus in a bowl of water for a few hours
  • Soak the vermicelli in another bowl of water for a few hours
  • Drain and chop the black fungus and vermicelli
  • Pat a block of firm tofu dry
  • Chop it into small cubes
  • Crack 4 eggs into a small bowl
  • Whisk the eggs
  • Set the egg mixture aside
  • Put the tofu into a large mixing bowl
  • Add the black fungus and vermicelli
  • Add the onions
  • Add the vegetarian chicken seasoning, pepper, and garlic powder
  • Mix well
  • Add the egg
  • Mix well
  • Spray an oven-safe casserole dish with some cooking spray
  • Pour the tofu mixture into the dish
  • Bake at 385 degrees for 30 minutes
  • Crack 1 egg and whisk in a small bowl
  • Add a couple of drops of yellow food coloring
  • Mix well
  • Turn off the oven and remove the casserole dish
  • Pour the yellow egg mixture onto the meatloaf, spreading it evenly all over the top
  • Put the casserole dish back int he oven
  • Leave the meatloaf in the oven for 10 minutes
  • Serve hot with rice
