Episode 95: Italian Tofu in Garlic White Wine Sauce

Ingredients:

  • 1 block of firm tofu
  • Black pepper
  • Kosher salt
  • Garlic powder
  • Potato starch
  • 6 cloves garlic, minced
  • 1 & 1/2 cups cherry tomatoes
  • 1 cup zucchini, chopped
  • 1/3 cup white wine
  • 1 cup vegetable broth
  • Juice from 1/4 lemon

Directions:

  • Pat the tofu dry
  • Put the tofu between two cutting boards in the sink
  • Add some weights on top to press the tofu
  • Press for 1 hour
  • Shred the tofu into bite-sized pieces
  • Sprinkle black pepper, kosher salt, and garlic powder over tofu
  • Dredge tofu in potato starch
  • Air-fry tofu at 350 degrees for 10 minutes
  • Saute the garlic in a skillet with some olive oil
  • Add the cherry tomatoes
  • Add the zucchini
  • When vegetables are tender, add the white wine
  • Add the vegetable broth
  • Add the lemon juice
  • Simmer for 10 minutes
  • Turn off the stove and toss in the tofu
  • Serve over your favorite pasta
