Episode 94: Raspberry Chocolate Tofu Pie

Ingredients:

  • 1 block firm tofu
  • 1 & 1/2 cups semi-sweet chocolate morsels
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1/2 cup powdered sugar
  • 1 cup raspberries
  • 1 pre-made graham cracker pie crust

Special equipment:

  • Blender

Directions:

  • Put the chocolate in a bowl ad microwave for 30 seconds
  • Take the bowl out and mix the chocolate up
  • Repeat this process until chocolate is completely melted
  • Put tofu (including the water) in the blender
  • Blend until smooth
  • Add the vanilla extract and maple syrup
  • Blend well
  • Add the chocolate
  • Blend until smooth
  • Add the powdered sugar and raspberries
  • Blend until smooth
  • Pour the chocolate tofu mixture into a graham cracker pie crust
  • Refrigerate for at least 2 hours
  • Serve chilled
