Episode 30: Cauliflower Piccata


  • 2 tablespoons vegan butter
  • 3/4 cup lemon juice
  • 1 & 1/2 cups sliced mushrooms
  • 2 shallots, minced
  • Some parsley
  • One cauliflower head
  • Olive oil
  • 3 tablespoons of capers
  • Pepper to taste


  • Place the cauliflower on a cutting board
  • Slice the cauliflower like a loaf of bread, making 1/2 inch thick slices
  • Place the cauliflower slices on a baking dish that is lined with aluminum foil
  • Drizzle olive oil over the cauliflower
  • Sprinkle a little pepper over the cauliflower
  • Put the cauliflower slices into an oven and bake at 425 degrees for about 15-20 minutes, until the cauliflower is tender
  • Melt the butter in a pan over low heat
  • Add the shallots
  • Add the lemon juice
  • Add the capers
  • Add the mushrooms
  • Simmer and stir occasionally until the sauce thickens a little
  • Put a cauliflower slice on a plate and spoon the sauce over it
  • Top with some parsley and serve
