Episode 135: Vegan Breakfast Skillet

Ingredients:

  • 2 potatoes, peeled
  • 1 carrot, peeled
  • 2 cups nutritional yeast flakes
  • 2 Impossible burgers
  • 3 cups potatoes, shredded
  • Italian seasoning

Special equipment:

  • Blender

Directions:

  • Boil the peeled potatoes and carrots until tender
  • Put the potatoes and carrots in a blender with 1 cup of water from the boiling
  • Add the nutritional yeast flakes
  • Blend until smooth
  • Set aside
  • Make hashed browns from the shredded potatoes
  • Cook up the Impossible burgers and crumble them
  • Season with Italian seasoning to taste
  • Mix the Impossible burgers with the hashed browns
  • Pour the cheese mixture on top
  • Serve hot
