Episode 131: Jamaican Cornmeal Porridge

Ingredients:

  • 1/2 cup cornmeal
  • 1 cup water
  • 2 cups soy milk
  • 1 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 cinnamon stick

Special equipment

  • Instant pot or electric pressure cooker

Directions:

  • Add cornmeal and water to electric pressure cooker
  • Mix well
  • Add soy milk, nutmeg, and vanilla extract
  • Mix well
  • Add cinnamon stick
  • Cover and set on “saute” for 9 minutes
  • Serve hot
