Episode 128: Carrot-Apple-Date Pancakes

Ingredients:

  • 2 carrots, grated
  • 1 & 1/2 cup soy milk
  • 1 apple, chopped
  • 2 dates, seeds removed
  • 1 &1/2 cups flour
  • 1/2 cup hazelnuts, crushed
  • 1 teaspoon vanilla extract
  • 1 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1 pinch of salt

Special equipment:

  • Blender

Directions:

  • Add soy milk, carrots, apples, dates to a blender
  • Blend until smooth
  • Add flour to a mixing bowl
  • Add nutmeg, baking powder, and salt
  • Add soy milk mixture
  • Mix well
  • Add vanilla extract and hazelnuts
  • Mix well
  • Cook pancakes on a griddle or stove top
  • Serve hot with maple syrup
