Episode 122: Vegan Crab Cakes

Ingredients:

  • 3 cups zucchini, grated
  • 1 & ½ cups panko bread crumbs
  • 2 eggs, beaten
  • ½ teaspoon Old Bay seasoning
  • ½ teaspoon Italian seasoning
  • 2 tablespoons mayonnaise, (vegan or regular)

Directions:

  • Put zucchini in a large bowl
  • Add panko bread crumbs, eggs, Old Bay seasoning, Italian seasoning, and mayonnaise
  • Mix well
  • Pack the zucchini mixture tightly into a 1/3 cup measuring cup
  • Flip it onto some parchment paper
  • Repeat until you use up the mixture
  • Deep fry the zucchini crab cakes until golden brown on both sides
