Episode 121: Vegan Mayonnaise

Special equipment:

  • Small blending device

Ingredients:

  •  1/2 block silken tofu
  • 1/3 cup canola oil
  • Juice of half a squeezed lemon
  • ½ teaspoon kosher salt
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon Dijon mustard

Directions:

  • Put tofu in blending device
  • Add canola oil, lemon juice, kosher salt, apple cider vinegar, Dijon mustard
  • Blend for 20-30 seconds

Vegan potato salad recipe:

  • Add 2 steamed and chopped potatoes to a bowl
  • Add ¼ cup of chopped onion
  • Add 1 celery stalk, chopped
  • Add ¼ cup of vegan mayo
  • Add ½ teaspoon celery salt
  • Add 1 teaspoon of mustard
  • Mix well
  • Season with salt and pepper to taste
