Episode 116: Vegan Black Bean Quesadillas

Ingredients:

  • 1 can black beans, drained
  • 2 cups raw cashews
  • 1/4 cup nutritional yeast flakes
  • 1/4 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 6 tablespoons salsa
  • 1 pinch of chili powder
  • 1 bell pepper, sliced
  • 1 zucchini, chopped
  • 1 cup mushrooms, sliced
  • Tortillas

Special equipement:

  • Food processor

Directions:

  • Put 2 cups of raw cashews in a food processor
  • Process for 4 minutes
  • Add 1 teaspoon olive oil halfway through the processing
  • Add nutritional yeast flakes, cumin, salt, garlic powder, salsa, chili powder
  • Process for 2 minutes
  • Stir fry some sliced bell peppers
  • Add some chopped zucchini
  • Add some sliced mushrooms
  • Stir fry until all vegetables tender
  • Cook up some tortillas
  • Add cashew cheese to one side of a tortilla
  • Add a layer of veggies
  • Sprinkle some black beans onto the quesadilla
  • Fold it up
  • Cook the quesadilla on the stovetop so both sides slightly browned
  • Serve hot
