Episode 109: Black Bean Sauce

Ingredients:

  • ¼ cup of fermented black beans
  • 3 cloves of garlic
  • 3 tablespoons ginger, minced
  • 3 tablespoons green onions, chopped
  • ½ cup of vegetable broth
  • 1 teaspoon of red wine vinegar
  • 2 teaspoons cane sugar
  • 1 tablespoon tapioca starch
  • 2 tablespoons water
  • 1 cup tofu, chopped
  • 1 cup vegetables of your choice, chopped

Directions:

  • Soak fermented black beans for 1 hour
  • Drain the beans and smash them up into a paste
  • Sauté the garlic with a little bit of olive oil
  • Add the ginger
  • Add the green onions
  • Add the black bean paste
  • Add the vegetable broth
  • Add the red wine vinegar
  • Add the cane sugar
  • Stir well and simmer for a few minutes
  • Add a mixture of 1 tablespoon tapioca starch and 2 tablespoons water
  • If the sauce is too salty for your taste, add a little more sugar
  • Pour over tofu and vegetables and serve with rice or pasta
