Episode 105: Cacio y Pepe

Ingredients:

  • 1 cup Pecorino cheese
  • ½ cup Parmesan cheese
  • ½ package spaghetti noodles
  • When the spaghetti is almost done
  • 1 tablespoon butter
  • Black pepper, crushed

Directions:

  • Grate 1 cup Pecorino cheese
  • Grate ½ cup Parmesan cheese
  • Boil spaghetti noodles
  • When the spaghetti is almost done, take out 1 cup pasta water and set aside
  • Drain the spaghetti
  • Melt butter into a pot over low heat
  • Add a little olive oil
  • Add a “generous amount of crushed black pepper”
  • Add ¼ of the pasta water
  • Add ½ of the Pecorino and Parmesan cheeses
  • Slowly stir to melt the cheese
  • Add some more pasta water
  • Add the rest of the cheese
  • Continue stirring until cheese completely melted
  • Mix the sauce into the spaghetti and serve hot
