Episode 103: Pad Thai Spaghetti

Ingredients:

  • 2 tablespoons tamarind paste
  • 2 tablespoons vegan fish sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons almond butter
  • 3 tablespoon cane sugar
  • 1 tablespoon chili paste
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, sliced
  • 1 egg (optional)
  • Green onions
  • Cilantro
  • Bean Sprouts
  • 1 lemon wedge
  • Cooked spaghetti

Directions:

  • 2 tablespoon tamarind paste
  • 2 tablespoons vegan fish sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons almond butter
  • 3 tablespoon cane sugar
  • Mix tamarind paste, vegan fish sauce, soy sauce, almond butter, can sugar together
  • Add chili paste if desired
  • Stir fry garlic with some olive oil
  • Add a chopped red bell pepper and a sliced carrot
  • Push the vegetables to one side
  • Crack an egg and scramble it
  • (Leave out the egg if you want the dish to be totally vegetarian)
  • Add some cooked spaghetti
  • Add the tamarind paste mixture
  • Mix well
  • Add some green onions
  • Add some cilantro
  • Add some beans sprouts
  • Serve hot with a squeeze of lemon juice
