
Ingredients:
- 2 carrots, grated
- 1 & 1/2 cup soy milk
- 1 apple, chopped
- 2 dates, seeds removed
- 1 &1/2 cups flour
- 1/2 cup hazelnuts, crushed
- 1 teaspoon vanilla extract
- 1 teaspoon nutmeg
- 1 teaspoon baking powder
- 1 pinch of salt
Special equipment:
- Blender
Directions:
- Add soy milk, carrots, apples, dates to a blender
- Blend until smooth
- Add flour to a mixing bowl
- Add nutmeg, baking powder, and salt
- Add soy milk mixture
- Mix well
- Add vanilla extract and hazelnuts
- Mix well
- Cook pancakes on a griddle or stove top
- Serve hot with maple syrup
