Episode 104: Bolognese Sauce

Ingredients:

  • 1 carrot, diced
  • 2 celery sticks, diced
  • 1 onion, diced
  • 1 cup mushrooms, diced
  • 4 cloves of garlic, minced
  • 1 pound of vegetable protein (e.g. ground Beyond Burger)
  • ½ teaspoon paprika
  • ½ teaspoon oregano
  • ½ teaspoon rosemary
  • ½ teaspoon thyme
  • 1 & ½ cups red wine
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon miso soy paste
  • 1 tablespoon agar powder
  • 1 tablespoon soy sauce
  • 14 ounces of crushed tomatoes
  • 1 cup water
  • 4 bay leaves
  • ¼ cup soy milk
  • 2 tablespoons of nutritional yeast flakes

Special equipment:

  • Dutch oven

Directions:

  • Stir-fry the carrots, celery, onion, and garlic with some olive oil until carrots are softened
  • Add the mushrooms
  • Add vegetable protein
  • Like ground Beyond Burger…
  • Mash everything up and cook for a few minutes
  • Add paprika, oregano, rosemary, and thyme
  • Add 1 & ½ cups red wine
  • Reduce heat and simmer for 5 minutes
  • Add balsamic vinegar
  • Add miso soy paste
  • Add agar powder
  • Add soy sauce
  • Mix well
  • Add crushed tomatoes
  • Mix well
  • Transfer to a Dutch oven
  • Add water
  • Add bay leaves
  • Bake uncovered in an oven at 300 degrees for 1 hour
  • Add soy milk
  • Add nutritional yeast flakes
  • Mix well
  • Bake for another 20 minutes
  • Serve with spaghetti noodles
