
Ingredients:
- 3 cups spinach
- 1 cup fresh basil
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1/2 cup olive oil
- 1/2 teaspoon salt
- 1/4 cup grated Parmesan cheese
- (Optional: 3 tablespoons pine nuts)
Special equipment:
- Blender
Directions:
- Rinse spinach and basil
- Transfer the spinach and basil to a blender
- Add the garlic
- Add lemon juice
- Add olive oil
- Blend for 30 seconds
- Scrape down the sides
- Add salt
- Add Parmesan cheese
- Serve over pasta
