
Ingredients:
- 2 blocks of firm tofu
- 2 tablespoons miso paste
- 1/2 teaspoon rosemary
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- Stuffing, prepared anyway you like
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Directions:
- Press tofu for half an hour
- Crumble the tofu into a food processor
- Add miso paste, rosemary, salt, cayenne pepper
- Blend until you get a smooth mixture
- Transfer half the tofu mixture to a small loaf pan lined with parchment paper
- Cover the stuffing completely with the rest of the tofu mixture
- Add soy sauce, maple syrup, olive oil, and salt to a small bowl
- Mix well
- Brush the glaze all over the top of the tofurkey
- Bake at 425 degrees for 30 minutes
- Remove from the oven and flip the tofurkey onto another baking tray
- Brush the glaze all over the tofurkey
- Broil the tofurkey in the oven for about 6 minutes
- Serve hot with mushroom gravy and mashed potatoes
