Episode 88: Beignets

Ingredients:

  • 1 cup soy milk
  • 1 tablespoon active dry yeast
  • 3 & 1/2 cups flour
  • 1 teaspoon salt
  • 1/3 cup avocado oil
  • 1/3 cup agave
  • Powdered sugar

Special equipment (optional):

  • Stand mixer

Directions:

  • Add soy milk and active dry yeast to mixing bowl
  • Mix well and let mixture sit for 10 minutes
  • Add 1 cup of soy milk to a mixing bowl
  • Add 2 cups of flour, salt, avocado oil, and agave
  • Mix well
  • Add 1 cup flour
  • Mix well
  • Add 1/2 cup flour and knead for a couple of minutes until you have a soft dough
  • Put the dough in well-oiled bowl
  • Cover the bowl with plastic wrap
  • Let the dough rest for an hour and a half
  • (You may put the dough in the refrigerator overnight)
  • Punch the dough down
  • Knead for a couple of minutes
  • Use a rolling pin and roll the dough down to 1/8 inch thickness
  • Cut the dough into two inch squares
  • Fry the beignets in avocado oil over medium heat
  • Fry the beignets for 10 seconds on each side
  • You should see the beignets puff up as you cook
  • Dust the beignets generously in powdered sugar
  • Serve hot
