Ingredients:
- 1 cup soy milk
- 1 tablespoon active dry yeast
- 3 & 1/2 cups flour
- 1 teaspoon salt
- 1/3 cup avocado oil
- 1/3 cup agave
- Powdered sugar
Special equipment (optional):
- Stand mixer
Directions:
- Add soy milk and active dry yeast to mixing bowl
- Mix well and let mixture sit for 10 minutes
- Add 1 cup of soy milk to a mixing bowl
- Add 2 cups of flour, salt, avocado oil, and agave
- Mix well
- Add 1 cup flour
- Mix well
- Add 1/2 cup flour and knead for a couple of minutes until you have a soft dough
- Put the dough in well-oiled bowl
- Cover the bowl with plastic wrap
- Let the dough rest for an hour and a half
- (You may put the dough in the refrigerator overnight)
- Punch the dough down
- Knead for a couple of minutes
- Use a rolling pin and roll the dough down to 1/8 inch thickness
- Cut the dough into two inch squares
- Fry the beignets in avocado oil over medium heat
- Fry the beignets for 10 seconds on each side
- You should see the beignets puff up as you cook
- Dust the beignets generously in powdered sugar
- Serve hot
