Episode 86: Lentil Loaf

Ingredients:

  • 1 cup red lentils, soaked in water overnight and drained
  • 1 & 1/2 cups vegetable broth
  • 1/2 cup chopped onions
  • 1/2 cup chopped carrots
  • 1 & 1/4 cups oat flour
  • 1 cup dry onion soup mix
  • 1 tablespoon wheat gluten

Special equipment:

  • Blender

Directions:

  • Add lentils and vegetable broth to blender
  • Blend until smooth
  • Pour into mixing bowl and set aside
  • Saute onions in a pan
  • Add carrots and saute until tender
  • Add onions and carrots to bowl
  • Add 1 cup of oat flour
  • Add wheat gluten
  • Mix well
  • Stir in 1 package of dry onion soup mix
  • Add 1/4 cup oat flour and mix well
  • Pour the mixture into a well-oiled baking dish
  • Bake at 375 degrees for 45 minutes
  • Take out of the oven and let cool for 15 minutes
