Episode 83: Okara Meatballs

Special equipment:

  • Blending device

Ingredients:

  • ¾ cup okara
  • ¼ cup ground rolled oats
  • ½ cup wheat gluten
  • 1 teaspoon onion flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 1/2 cup cooked rice
  • ½ cup ketchup
  • 1 teaspoon curry paste
  • 1 tablespoon olive oil

Directions:

  • Add okara to a bowl
  • Add ground rolled oats, wheat gluten, onion flakes, garlic powder, oregano, and parsley
  • Set aside
  • In a small blending device, add  cooked rice
  • Add ketchup, curry paste, and olive oil
  • Blend until you get a thick paste
  • Add all the dry and wet ingredients to a large bowl
  • Mix well and shape into meatballs
  • Steam the meatballs for 15 minutes
  • Serve with your favorite pasta sauce
