Episode 78: Creamy Quinoa

Ingredients:

  • 1 & 1/4 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 cup quinoa
  • 3/4 cup coconut cream
  • 1 cup chopped spinach, kale, or broccoli

Directions:

  • Boil the water
  • Add the salt and garlic powder
  • Add the quinoa
  • Lightly stir and reduce heat to simmer
  • Cover and simmer for 20 minutes
  • Mix in the coconut cream
  • Mix in the broccoli
  • Cover and simmer for 6 minutes
  • Serve hot
