Episode 77: Udon


  • 2 cups flour
  • 2 tsp salt
  • 1/2 cup water

Special Equipment:

  • Rolling pin


  • Dissolve salt into water in a small bowl
  • Put the flour in a large mixing bowl
  • Add the salt-water mixture
  • Mix well until a soft dough forms
  • Put the dough in a plastic Ziploc bag and seal it up
  • Put the dough on the flour and stomp on it for 5-10 minutes
  • Let the dough rest for an hour
  • Roll the dough flat on a cutting board
  • Roll the dough until it is about 1/8 inch thick
  • Fold the dough a third from the top and a third from the bottom
  • Cut into strips with a sharp knife
  • Unroll the strips flat
  • Drop the dough strips into boiling hot water
  • After 3 minutes the noodles should begin to rise to the top of the pot
  • Boil for another 3 minutes then remove from heat
  • Rinse the noodles in running cold water
  • Serve with hot vegetable broth and your favorite sliced vegetables
