Episode 75: Spinach Potato Curry

Ingredients:

  • 1/4 cup onion, chopped
  • 1 potato, chopped
  • 1/2 cup stewed tomatoes
  • 3 cups spinach
  • 2 tablespoons green curry paste
  • 1 cup coconut milk

Directions:

  • Saute onion in a pan with some olive oil
  • When the onions have softened, add the curry paste
  • Add the potatoes
  • Cook for about 10 minutes until potatoes have softened
  • Add the stewed tomatoes
  • Add the coconut cream
  • Add the spinach
  • Reduce heat to a simmer and cook for 10 more minutes
  • Serve with rice or bread
