Episode 74: Soybean Milk

Ingredients:

  • 1 cup soybeans
  • 10 cups water

Special Equipment:

  • Blender
  • Cheesecloth

Directions:

  • Soak soybeans in 6 cups water for at least 12 hours
  • De-shell soybeans by gently rubbing soybean between thumb and index finger
  • Rinse soybeans and drain
  • Add soybeans to blender
  • Add 4 cups water
  • Pulse a couple of times
  • Strain soybean mixture through a cheesecloth
  • Wring cheesecloth
  • The pulp (okara) can be saved and used for another recipe
  • Bring the soy milk to a boil in a large pot then reduce heat to medium
  • Stir constantly for 20 minutes
  • Skim the soy milk and allow to cool for 1 hour
  • Strain the soy milk through a cheesecloth one more time
