Episode 73: Zucchini-Carrot-Banana Bread

Ingredients:

  • 1 cup carrots, peeled and boiled
  • 1/2 zucchini, grated
  • 1 banana, mashed
  • 2 cups flour
  • 3/4 cup soy milk
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon agave

Directions:

  • Add the flour, salt, baking soda, baking powder to a large bowl
  • Add the banana, carrots, and zucchini
  • Add the soy milk and mix well
  • Add the agave and mix well
  • Grease a baking pan with a little olive oil
  • Add the mixture to the baking pan and bake at 350 degrees for 45 minutes
  • Let cool for at least 10 minutes before serving
