Episode 70: Bread Bowls


  • 2 cups flour
  • 1 tablespoon active-dry yeast
  • 1 cup lukewarm water
  • 1 tablespoon sugar
  • 1 tablespoon olive oil
  • Cornmeal for dusting

Special equipment:

  • Stand mixer


  • Add active-dry yeast to water in a bowl
  • Mix well
  • Add sugar and mix well
  • Set aside the yeast mixture for a few minutes
  • Add the flour and salt to a mixing bowl
  • Add the yeast mixture
  • Add the olive oil
  • Mix well
  • Knead the dough for 8 minutes
  • Roll the dough into a ball and put into a well-oiled bowl
  • Cover the bowl with a damp cloth and set aside for 30 minutes
  • Punch the dough down
  • Knead the dough for a few minutes and divide in half
  • Make each half into a round shape
  • Cover a baking tray with some parchment paper
  • Dust the bottom of each dough with some cornmeal
  • Set the tray aside and allow dough to rise for 30 minutes
  • Bake the dough at 400 degrees for 20 minutes
  • Let cool on a rack
  • Carefully cut out an opening with a knife
  • Serve with your favorite soup
