Episode 69: Burger Buns

Ingredients:

  • 2 cups flour
  • 1 teaspoon salt
  • 1 tablespoon wheat gluten
  • 1 tablespoon sugar
  • 1 teaspoon active-dry yeast
  • 2/3 cup lukewarm water
  • 2/3 cup milk
  • Chia seeds

Special equipment:

  • Stand mixer

Directions:

  • Mix all ingredients in a bowl
  • Knead the dough for 5-10 minutes
  • Put the dough in a well-oiled bowl
  • Cover and let rest for 1 hour
  • Punch the dough down
  • Tear off enough dough to fit the palm of your hand
  • Make a round shape
  • Flatten each dough ball with a palm press
  • Cover the dough balls and let rest for 30 minutes
  • Lightly brush some milk over the top of each bun
  • Sprinkle chia seeds over each bun
  • Bake at 400 degrees for 15 minutes
  • Serve with your favorite veggie burger
