Episode 63: Jack Fruit Tacos

Ingredients:

  • 1 can of jack fruit
  • 1/4 cup onions, chopped
  • 4 cloves garlic, minced
  • 3 teaspoons taco powder
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 teaspoons coconut oil
  • 1/4 cup vegetable broth

Directions:

  • Drain and rinse the jack fruit
  • Shred the jack fruit with two forks
  • Put the jack fruit into a large plastic bag
  • Add the onions, garlic, taco powder, cayenne pepper, coconut oil, and vegetable broth
  • Seal the plastic bag and shake well
  • Leave the plastic bag in the refrigerator to marinate for 2 hours
  • Cook the jack fruit over medium heat on a stove for 5-7 minutes
  • Serve with salsa and tortillas
