Episode 61: Bagels

Ingredients:

  • 1 & 1/2 cups flour
  • 1 tablespoon wheat gluten
  • 1 teaspoon active dry yeast
  • 1/2 teaspoon salt
  • 1 tablespoon maple syrup
  • 3/4 cup lukewarm water

Directions:

  • Mix all ingredients together until you get a soft dough
  • Knead for several minutes
  • Transfer the dough to an oiled bowl
  • Cover with a damp paper towel
  • Let the dough rest for an hour
  • Tear off enough dough to fit into the palm of your hand
  • Shape into a ring
  • Blanch the bagels in boiling water for 30 seconds then set on a baking tray
  • Bake at 425 degrees for 25 minutes or until golden brown
  • Serve with your favorite spread
