Episode 55: Vegan Nut Frosting

Ingredients:

  • 1/2 cup hazelnuts or pecans
  • Water
  • Sugar

Special equipment:

  • Piping bag and pipettes
  • Magic Bullet (or equivalent type of blending device)

Directions:

  • If using hazelnuts, remove all the shells
  • Soak the nuts in water for 2-3 hours (or even overnight)
  • Put the nuts in the Magic Bullet with a couple of tablespoons of water
  • Blend for 5 seconds
  • Check consistency of nut mixture
  • If too dry, add a few more tablespoons of water and blend for another 5 seconds
  • Repeat process until frosting-like consistency obtained
  • Add 3 tablespoons of sugar and 1 tablespoon of water
  • Blend for 5 seconds
  • May add more sugar to reach desired amount of sweetness
  • Put the mixture in a piping bag and pipette onto a muffin or cake
  • Chill in the refrigerator for best results
