Episode 52: Vegan Blackberry Cheesecake

Crust ingredients:

  • 1/2 cup pecans
  • 1/4 cup unsweetened shredded coconut
  • 4 dates
  • 1/8 cup water
  • 1 teaspoon agave

Special equipment:

  • Food processor
  • Parchment paper
  • Directions:
  • Put all the ingredients in a food processor
  • Process until you get a sticky mixture you can shape into a ball
  • Line a plate with parchment paper
  • Flatten the mixture onto the plate
  • Make a circle that is about 1/2 inch thick

Filling ingredients:

  • 1/2 cup cashews, soaked overnight
  • Juice of 1/2 lemon
  • 3 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon agave

Directions:

  • Put all ingredients in a food processor
  • Process until you get a coarse mixture
  • Put the filling on top of the crust
  • Smooth evenly with a spoon
  • Put the cheesecake in the freezer for 1 hour

Sauce ingredients:

  • 1 cup blackberries (may substitute with berries of your choice)

Directions:

  • Put the berries in a food processor
  • Process until smooth
  • Pour sauce on top of cheesecake and serve
