Episode 43: Quinoa-Sweet Potato Burgers


  • 2 sweet potatoes
  • 1/2 cup quinoa
  • 1/2 cup corn
  • 1 cup coarsely chopped spinach or kale
  • 1 tsp curry powder
  • 1/2 tsp cayenne powder


  • Skin the sweet potatoes and bake them at 350 degrees for 45 minutes
  • Pour a cup of water in a small pot and bring to a boil
  • Add quinoa and reduce heat to a simmer for 15 minutes
  • Drain water and set quinoa aside
  • Add sweet potatoes to a bowl and mash them up
  • Add corn and mix well
  • Add the greens and mix well
  • Add the quinoa and mix well
  • Add the curry and cayenne powders and mix well
  • Shape the vegetable mixture into burger-sized patties
  • Place patties in a refrigerator and chill for at least one hour
  • Lightly fry the patties on a pan over medium heat until both sides are crispy
  • Serve on a bun with your favorite condiments
