Episode 42: Haystacks

Traditional Ingredients:

  • Fritos chips or tortilla chips
  • Refried or black beans
  • Diced tomatoes
  • Lettuce
  • Shredded cheddar cheese
  • Diced onions
  • Sliced olives
  • Salsa
  • Guacamole

Adventasty-style ingredients:

  • 1/2 cup quinoa
  • 1 cup uncooked rice
  • 2 cups vegetable broth
  • 1 cup sweet corn
  • 4 garlic cloves minced
  • Shredded Mexican-blend cheese

Directions to make quinoa-rice mixture:

  • Pour 1 cup of water into a pot and bring to a boil
  • Add quinoa
  • Stir well and reduce heat to a simmer
  • Pour vegetable broth into another pot and bring to a boil
  • Add rice
  • Stir well and reduce heat to a simmer
  • Cook the beans in a third pot and mash them
  • Chop up the garlic, onion, lettuce, and tomatoes
  • When the rice is almost done add the garlic
  • Add the corn to the rice
  • Drain the quinoa and add to the rice
  • Mix well

Directions:

  • Layer a plate with either chips or the quinoa-rice mixture
  • Add a layer with beans
  • Add shredded cheese (optional)
  • Add lettuce or kale-spinach blend
  • Add diced tomatoes
  • Add diced onions
  • Add salsa and/or guacamole
  • Serve
