Episode 39: Beet Burgers


  • 1 cup cashews
  • 2 zucchini
  • 5 beets
  • 1 cup carrots
  • 2 cups quick oats
  • Olive oil to drizzle
  • several cloves of minced garlic
  • 1 cup chopped broccoli

Special equipment:

  • Food processor
  • Gloves


  • Roast cashews in oven at 350 degrees for about 10 minutes until golden brown
  • Wrap beets in aluminum foil
  • Place all vegetables on a baking dish
  • Drizzle a little oilve oil over carrots and zucchini
  • Roast vegetables in oven at 425 degrees for 40-45 minutes until tender
  • zPut on gloves and unwrap beats from foil
  • Use knife to chop off ends of beets
  • Carefully peel off skin of the beets
  • Put all vegetables in food processor and blend until smooth
  • Transfer vegetable mixer to a large bowl
  • Add quick oats and mix well
  • Add garlic and broccoli
  • Add cashews
  • Shape vegetable mixture into hamburger-sized patties
  • Lightly fry patties until outsides are slightly crisp
  • Serve on a bun with your favorite sauce
