Episode 36: Broccoli Soup

Ingredients:

  • 3 cups broccoli
  • 2 potatoes, peeled and chopped
  • 1/4 cup nutritional yeast flakes
  • 1/2 onion, diced
  • 1 celery stalk, chopped
  • 1 cup rice milk
  • 2 cloves garlic diced
  • 4 cups water

Directions:

  • Stiry-fry onions until they start to get tender
  • Add the garlic and stir-fry for another minute
  • Add the potatoes
  • Add the water
  • Simmer for 10-15 minutes
  • Add the broccoli
  • Continue cooking for about 3 more minutes
  • Transfer everything to the blender
  • Add rice milk to the blender
  • Make sure top of blender is slightly open to allow for steam to escape during blending
  • Blend until smooth
  • Transfer soup to a pot
  • Add nutritional yeast flakes and mix well
  • (Add more rice milk if soup is too thick)
  • Simmer for a few more minutes
  • Add nutmeg or pepper to taste if desired then serve
